Potato Pancakes

Mom was with us tonight in thought for “Dinner” as the southerners call it. I still call it “Supper”. You never hear of a dinner club but often hear of a supper club. One of her favorite meals was potato pancakes and that was what we had tonight. When mom was still with us and we took the folks out to eat she would want to go to Perkins for the potato pancakes. Dad would have rather eaten the Swiss steak and baked beans at the Fryin’ Pan but bowed to Mom’s wishes. Here’s the recipe we use:


2 eggs

1/4 c. milk

1/2 small onion, cut in pieces

1/4 c. all-purpose flour

1/4 tsp. baking powder

1 tsp. salt

Dash pepper

6 slices bacon, fried and crumbled (optional)

4 medium potatoes, peeled and cut in pieces

Homemade apple butter

Put first 7 or 8 ingredients and one-half  the potatoes in blender container; blend till potatoes are coarsely chopped. Add remaining potatoes; blend till coarsely chopped. Bake on medium-hot, lightly greased griddle, using 1/4 cup batter for each pancake. (Use a spatula to spread batter evenly.) Brown one side; turn. Brown other side, about 2 to 3 minutes more. Serve with homemade apple butter. Makes 12 pancakes.
