A lot of fishermen and women enjoy the fight a norther pike puts up but when it comes to cleaning and eating their catch it’s a different story. Here is a recipe worth trying.
4 fillets of northern pike (12-18 inches long)
2 c. pancake mix
1 King-size bottle 7-up
Deep fat for frying
Cut fillets into 1″ square pieces. Take a pair of pliers and remove all bones from these pieces. (This is a tedious chore, but the results are well worth it.) After making sure all bones are removed, add enough 7-up to the pancake mix to make a sticky batter. Dip the cut-up and boned pieces of fish into the batter and then into a deep fat fryer when the fat is at 350 degrees F. Fry until pancake batter is golden brown all over. serve with a cocktail sauce, soda crackers, butter and a favorite cold beverage.
