Bannock Campfire Bread

Rusty Nails, a good friend back in the Dakota Territories, does a lot of cast iron cooking during the summer months. Here’s a recipe that he and you may want to try.

Bannock Campfire Bread

4 c. flour
8 tsp. baking powder
About 3 c. cold water
1 tsp. salt
1 tbsp. sugar

Mix the ingredients thoroughly and stir in enough water to make a thick batter that will pour out level. Mix rapidly with spoon until smooth. Pour out into large greased fry pan, set on hot coals. Turn when bottom part is brown. Or put greased Dutch oven on coals and rake the coals up around the sides. Pour batter into this and put on the lid. Cook until no dough sticks to a sliver of wood stuck into it. This can also be cooked in a greased pan in the oven. Bake 45 minutes at 400 degrees F.
