Piquant Meat Loaf

Tired of the same old meatloaf recipe? Here’s a different one. You can use wild game, beef, pork, poultry, or any combination there of.

Piquant Meat Loaf

1/4 c. dry bread crumbs
1 c. milk
1 1/2 lb. ground meat
1 onion, chopped and parboiled
2 eggs, slightly beaten
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. sage or poultry seasoning

Soak crumbs in milk and add meat, eggs, onions, and seasonings. Pack lightly in greased loaf pan. Spread with sauce and bake from 1 hr. to 1 1/4 hrs. at 350 degrees F.

Sauce: combine 4 tbsp. brown sugar, 5 tbsp. ketchup, 1/2 tsp. nutmeg, 1 1/2 tsp. dry mustard. Pour over meat loaf.
