Take a large metal pan, filled with fine sand, and bury your red potatoes in the sand. Place this pan in the oven and bake at 400 degrees for about an hour. This is a superior way of baking potatoes rather than just oven baking them. It keeps the skin and the potato near the skin from overcooking and becoming hard.
