Russian Spinach

Spinach is another one of those foods that many people do not like in any form. The following recipe takes a food that is difficult to serve at any meal and turns it into a vegetable that ‘picky eaters’ will at least try.

Russian Spinach

1 qt. fresh spinach or 1 box frozen spinach
1 qt. fresh broccoli spears or 1 box frozen broccoli
2 c. water
1 tsp. salt

Chop the spinach and broccoli into the smallest pieces possible. Place the 2 cups of water and 1 tsp. of salt into a large pot and bring to a boil. Add the chopped broccoli and boil for six minutes. Add the chopped spinach and boil for another four minutes. Make sure the two are mixed together well and then drain. While still hot, mix in just enough mayonnaise to barely cover the pieces.
