Cucumber Salad

Our cucumber plants are finally slowing down, thank goodness. The pickle queen has made more pickles than we need and we’ve given away buckets full of cucumbers to friends and neighbors. We’ve eaten pickles and cucumbers at many meals this summer along with many other fresh veggies. Here’s a favorite salad recipe.

Cucumber Salad

Slice 2 large cucumbers and put them in leftover pickle vinegar to marinate (add sliced onions). Drain well.

Make a creamy dressing to mix with the sliced cucumbers.

1/2 c. mayonnaise (half salad dressing and half ranch dressing)
1/4 c. sugar
2 Tbsp. vinegar
1/4 tsp. white pepper
A pinch of dill weed
