Roast Goose

Since goose season is upon us, here is a good goose recipe.

Roast Goose

1 wild goose, dressed
1/2 c. pancake flour
1/2 c. regular flour
salt, pepper, paprika
fat sufficient for browning
onion, sliced
bacon slices

Cut wild goose in serving pieces, splitting breast. shake or roll the pieces in the seasoned flour mixture. Brown in hot fat in iron Dutch oven. Arrange the pieces in layers with sliced onion. Put slices of bacon over top and bake covered at 350 degrees for 2 1/2 to 3 hours. Makes a delicious gravy.
