Here is a glaze that you may use with chicken, turkey, pork or ribs.
1 Tbsp. extra virgin olive oil
1/2 c. finely chopped onions
1/2 c. pure maple syrup
1/2 c. ketchup
1/4 c. bourbon or other whiskey
1 tsp. hot pepper sauce (optional)
1/2 c. mayonnaise
In a saucepan, over medium to high heat, place the EVOO and cook onion until golden brown. Add syrup, ketchup, bourbon, and hot pepper sauce. Bring to a boil over high heat. Reduce heat and simmer until sauce thickens. Remove from heat and whisk in mayonnaise. Makes approximately 1 cup of glaze.
