Peanut Soup

Peanut soup came up in a conversation we were having the other day, so I thought a recipe for Peanut Soup would be in order.

2 Tbsp. butter
2 Tbsp. onion, grated
1 rib celery, thinly sliced
2 Tbsp. all-purpose flour
3 c. chicken broth
1/2 c. peanut butter
1/4 tsp. salt
2 Tbsp. lemon juice
2 Tbsp. chopped roasted peanuts

Melt butter in a saucepan over low heat. Add onion and celery. Saute for around 5 minutes. Add flour and mix until well blended. Stir in chick broth and simmer for 30 minutes. Remove from heat and strain broth. Stir peanut butter, salt and lemon juice into broth and mix well. Serve hot; Garnish with a teaspoon of chopped peanuts. Makes 6 servings.
