Ramen noodles are noted for making a quick and easy meal if you are short of time or have a had a long day and need to kick back early. Here’s a recipe using ramen noodles and left over meat that will get you to your recliner quickly.

1 small head of cabbage, coarsely chopped
4 carrots, sliced
1 medium onion, diced
3 pkgs. ramen noodle soup (match flavor to meat)
3 cups cooked leftover meat

Boil the vegetables together in a small amount of water for 5 minutes and drain. Boil the ramen noodles 3 to 4 minutes (do not overcook). Put a small amount of oil in a wok or large, deep frying pan. Set the heat to medium and add the boiled, drained vegetables. Mix well after adding the remaining ingredients. While cooking, add the seasoning packet from the ramen noodle soup and soy sauce to taste. Heat an additiional 3 to 5 minutes or until hot. Top with chow mein noodles if desired.
