Peanut Dipping Sauce

Looking for a different dipping sauce to accompany your finger foods such as chicken strips or nuggets? This peanut dipping sauce is also good over stir fry, rice, etc.

1 Tbsp olive oil
1 Tbsp dark sesame oil
2/3 c small-diced red onion
1 1/2 tsp minced garlic
1 1/2 tsp minced fresh ginger
1/4 tsp crushed red pepper flakes
2 Tbsp wine vinegar or balsamic vinegar
1/4 c light brown sugar, packed
2 Tbsp soy sauce
1/2 c creamy peanut butter
1/4 c ketchup
2 Tbsp dry sherry (optional)
1 1/2 tsp fresh lime juice

In a small heavy kettle over medium heat cook the olive oil, sesame oil, red onion, garlic, ginger and red paper flakes until the onion is transparent – around 10 to 15 minutes. Whisk in the vinegar, brown sugar, soy sauce, peanut butter, ketchup, sherry, and lime juice while cooking for another minute or so. After letting this cool, serve alone with your finger food or along side a ranch dressing dip.
