Bacon and Cheese Potato Soup

I love the loaded baked potato at Famous Dave’s almost as much as the loaded potato skins at TGIF. This love for such a tasty fare would make all my doctors cringe if they knew of my hankering for this treat. I stumbled on this recipe for bacon and potato soup and as we all know soup’s good for us, so my doctors won’t have to worry.

3 c milk
1 can cream of potato soup
2 c frozen hash browns
1 c cheddar cheese, shredded
2 slices bacon, cooked and crumbled
1/4 c green onions, sliced

After mixing the milk and soup in a sauce pan, stir in the hash browns. Bring to a boil, stirring occasionally. Reduce the heat to medium low and simmer for 10 minutes. Serve in individual bowls that are topped with the cheese, bacon and onion.
