Oatmeal Wheat Bread

Do you enjoy both oatmeal bread and wheat bread? Here’s a recipe for a combination of both.

3 Tbsp yeast, soaked in 1 cup warm water
2/3 c cane molasses
2/3 c shortening/cooking oil
2 c rolled oats
2 c wheat flour
8 c flour
4 tsp salt
1 Tbsp lecithin
3 c warm water

Add the yeast to 1 cup  warm water stirring until dissolved.  Let set until yeast starts to foam and expand.  Add and mix the other 3 cups of warm water, salt, lecithin and molasses. Stir in the flour and oats. Knead while adding the shortening/cooking oil.  Knead until bread dough  is smooth and elastic.  Let rise until double. Work down and shape into 3 or 4 loaves. Let rise in pans. Bake at 300 degrees for 25 to 30 minutes.
