Freezing Cole Slaw

Down here in the South it’s common to have cole slaw on your pulled pork or BBQ sandwich. During the winter you may not have any cabbage to make cole slaw from, so why not thaw out a box/bag of frozen cole slaw to accompany your sandwich.

1 head cabbage, shredded
1 green pepper, chopped
1 carrot, grated
1 c vinegar
1 tsp celery seed
1 tsp mustard seed (optional)
1 tsp salt
1/4 c water
2 c sugar

Mix the salt with the cabbage and let stand for 1 hour. Squeeze out the moisture and add the carrot and pepper. Mix the water, vinegar, celery seed, mustard seed and sugar. Boil the mixture for 1 minute, then cool to lukewarm before pouring over vegetables. Box or bag and freeze.
