Canned Pepper Cabbage

In place of cole slaw on your pulled pork or BBQ sandwich, why not try pepper cabbage. Here’s a recipe for canning pepper cabbage so that it may be enjoyed year round.

1 large head cabbage, coarsely shredded
2 green peppers, chopped
1 c water
1 c vinegar
1 c sugar

Mix the water, vinegar and sugar together and bring to a boil to make a syrup. Mix the cabbage and peppers together and pack into jars. Put 1/3 tsp salt in each pint. Fill jars with prepared syrup. Cold pack for 20 minutes.
