English Muffin Bread

We went to the Wood Grill in Harrisonburg last Saturday morning for breakfast. As usual, I started out with an eggs benedict and some sausage. The sausage was ok. The ham was good, the sauce was good, the poached egg was on the hard side, just like I like them, but the English muffin (store bought, I would guess) couldn’t be cut with a sharp knife. Here’s a recipe for English muffin bread that puts theirs to shame.

5-1/2 c flour
1/4 tsp soda
2 pkg yeast
1 Tbsp sugar
1-1/2 tsp salt
2 c milk
1/2 c water
Corn meal for dusting pans

Preheat oven to 350 degrees. Mix 3 cups of flour and the other dry ingredients. Heat milk and water and beat together with the flour mixture. Add the rest of the flour and mix well. Grease 2 loaf pans and sprinkle with corn meal. Divide dough for 2 pans. Let rise for 45 minutes. Bake for 45 minutes in 350 degree oven.
