Three of the food groups on the Massanutten Food Group Plate (the old Food Pyramid) are squash, bacon and pizza. What else is there to do up here than to try new things. So, knowing that the old saying, ‘Even a dog turd would taste good with bacon on it.’ must be true, I figured, ‘Why not pass on the combination of the three food groups. Thus, the recipe, Butternut Squash-Bacon Pizza.
1 lb package of refrigerated pizza dough (or your homemade dough)
1 lb butternut squash, cubed in 1/2 inch pieces
3/4 of an onion, sliced
1 Tbsp rosemary
1/4 lb bacon, sliced in 1/2 pieces
2 Tbsp balsamic vinegar
3 Tbsp olive oil
4 oz goat cheese (mozzarella would do)
2 Tbsp Parmesan cheese
Salt and pepper to taste
Preheat the oven to 400 degrees. Place the cubed squash on a cookie sheet. Coat with olive oil, salt and pepper. Roast for 20 minutes until tender. Meanwhile, fry the bacon in a medium size skillet over medium heat. Drain the grease and set aside the bacon. Add the olive oil and sliced onion to the pan in which the bacon was fried. Cook on low until the onions are carmelized. Remove the squash from the oven and increase the oven temperature to 450 degrees. After spreading the dough over a baking sheet, place the bacon, squash, carmelized onions, goat cheese, rosemary and Parmesan on top. Bake for an additional 15 minutes or until the crust is golden. Remove the pizza nd drizzle the balsamic vinegar on top before serving.
