Sauerkraut Salad

If you are a true sauerkraut lover and have run out of sausage to eat with it, try sauerkraut as a salad. Here’s a recipe.

3-1/2 c sauerkraut , drained
1 large green pepper, chopped
1 c celery, chopped
1 onion, chopped
1 c salad oil
1 c sugar
1/2 c vinegar
3/4 tsp salt
1 tsp celery salt
1 tsp powdered mustard

Add 1 cup of sugar to 1/4 cup of water and bring to a boil. Cool water/sugar mixture. Mix together the kraut, green pepper, celery, and onion (first 4 ingredients). Pour the cooled water/sugar mixture over this kraut mixture. Let this set overnight. Drain. Mix the salad oil, sugar, vinegar, salt, celery salt and powdered mustard (last 6 ingredients) together and pour over the kraut mixture.
