Cornmeal Mush

It’s was this time of the year when the weather was nipping at your nose that Dad liked his Cornmeal Mush. It’s easy to make and can be eaten right away or chilled, sliced and fried.

4 c water
1 tsp salt
1 c cornmeal

Put 3 of the 4 cups of water on the stove to boil. Save the fourth cup to stir with the cornmeal. Pour the mixture into the boiling water, stirring constantly until it boils thoroughly. Turn the temperature to low, cover the kettle and stir occasionally. Cook for an hour or more. Eat it with butter and syrup or milk. Or pour it into a dish to cool, slice and fry later.
