Dried Beef

Here’s a recipe for dried beef , but you could substitute pheasant or duck breasts for the beef.

25 lb meat
1-1/4 lb salt
1/2 lb sugar
1/2 oz salt petre

Mix the 3 dry ingredients thoroughly. Rub the meat with 1/3 mixture; pack in jar. Weight it down. Let stand 3 days. Rub another 1/3 mixture on it. Repeat in 3 days when mixture is used up. Smoke hot. This can be made with pheasant breasts or duck breasts. Put pheasant breast in paper bag to smoke.
