Liver Sandwich

Got to looking through some old family photo albums and ran across some pictures of my great-granddad. I was still living at home when he died and remembered that my Dad took a train to Indiana to attend his funeral. For many years after the trip, Dad would tell the story of him, not especially liking liver, having to eat liver sandwiches on the train as that was all that he could afford. Maybe that’s why liver and onions wasn’t a staple on our supper table. Here’s a recipe for liver sandwiches if you are a liver lover.

1/2 lb cooked liver
4 Tbsp chili sauce
Salt and pepper
1/2 c diced celery
2 Tbsp melted butter

Chop or grind the liver. Combine the liver, celery, chili sauce and butter. Season to taste. Use the mixture as a filling between buttered slices of bread, either white or whole wheat. If you desire, 1 tablespoon of minced onion and 2 tablespoons of chopped pickle may be used instead of the chili sauce.
