Beet Wine

There’s an ad on TV pushing some beet concoction that will make you feel better is as little as 20 minutes. There’s a hand written recipe in my grandmother’s recipe book for beet wine. I don’t know how good the wine was, but now I know why grandma always felt so good. Here’s what she has written down.

For 1-1/2 gallons wine. Peel and cut up into small pieces 8 lbs beets. Cover with water. Boil till done. Strain off juice and put on more water. Boil beets again. You should have about 1-1/2 gallons (of juice). Add 6 pounds of sugar to the juice and boil for 10-12 minutes. Let cool. Add 1 pound raisins, 2 lemons, 1 pound raisins sliced and 1 compressed yeast soak in warm water. Put in jar all together. Stir once a day for nine days and take off scum the first 3 days. After the 9th day take out the lemons and oranges. Grind them and put them back in juice. Let stand one day. Strain and put into bottles but don’t tighten the lids. Let stand 3 weeks after bottling. Strain and seal tight.
