Pickled Pigs Feet

If you grew up on a farm, you probably have heard the old saying about using everything but the squeal when it came time to butcher a hog. For those of you who are trying to live more like our ancestors did, here’s a recipe for using pig trotters.

4 pig’s feet
2 tsp whole cloves
1 bay leaf
4 c vinegar
1 Tbsp salt
Pepper to taste
1 onion

Wash and scrape the pig’s feet.(Best done after the hog is dispatched and cut up.) Boil until the meat will slip from the bone. Drain and reserve. Place the meat in a bowl. Combine the vinegar, cloves, salt, pepper, bay leaf and onion. Boil for 30 minutes. Add 2 cups broth in which the pig’s feet were cooked. Strain. Pour over the pig’s feet. Let stand for 3 days before using.
