Want to make some headcheese but don’t have a head or other bits and pieces of meat. Try this recipe.
4 pork hocks
4 deer shanks or 2 moose shanks or 2 caribou shanks
Cut the meat off the bones and into very small pieces before placing the meat and bones into a large pot. After covering with water, add salt, pepper, garlic salt and onion salt. Cover. Boil slowly until well done and any remaining meat falls from the bones. When done, pour into loaf pans and cool well. When it sets, it will slice nicely and is very good for sandwiches.
