Salmon Braised in Beer

Some may say this is a waste of good salmon while others might say this is a waste of good beer. I can tolerate salmon and do much better with beer. Put the two together and you have a mighty fine meal.

2 lbs salmon
1 Tbsp butter
1 c beer
1 bay leaf
1 tsp peppercorns
1 carrot, thinly sliced
1 onion, thinly sliced

Place fish in a buttered baking dish. Add remaining ingredients. Cover dish with buttered aluminum foil. Preheat oven to 300 degrees, then bake 20 minutes until fish flakes easily. Transfer salmon to a serving dish. Serve hot or cold.
