Moose Tenderloin Casserole

After watching the Last Alaskans on television the other night with everyone trying to ‘catch’ a moose before the dark winter set in, reminded me of this Moose Tenderloin Casserole recipe I received a few years back. I’m sure it would work with other hoofed wildlife.

8-12 pieces flattened tenderloin
4 medium-sized onions, chopped
1 green pepper, chopped
1 tin (1 can) cream of mushroom soup
Seasoning

Lightly fry onions and green pepper. Flour and season to taste the tenderloin and brown slightly. Drain off any excess frying fat. Place meat and vegetables in casserole and cover with mushroom soup and 1 cup of water. Cook in moderate oven for about 1 hour or until tender.
