Spinach is found in dips, green eggs & ham, salads, creamed dishes, pasta dishes and the list goes on. If it’s such a versatile food, why not try a spinach sandwich. Here’s a starting recipe.
3 c uncooked spinach
2 hard-cooked eggs, chopped
Mayonnaise or other salad dressing
1/2 c diced celery
1/4 c chopped green onions
Salt and pepper
Shred the raw spinach. Add the onion, celery and eggs. Moisten with salad dressing to a spreading consistency. Season to taste. Best used as a filling between slices of white or graham bread.
