Onion Squares

If your garden is anything like ours, you end up with an abundance of onions and look for creative ways of serving them. Here is a recipe that uses onions and biscuit mix to make an onion dish your family will enjoy.

2 c sliced onions
2 c biscuit mix
3/4 c (3 oz) grated cheddar cheese
1/2 c sour cream
1 egg, beaten
2 Tbsp butter
1/2 c milk
1/2 tsp salt

Sauté the sliced onions in melted butter until transparent (about 20 minutes). Mix the biscuit mix and cheese; stir in the milk to form a dough. After turning onto a lightly floured board, knead it for 30 seconds. Divide and put into two 8 inch square pans. Spread the sautéed onions on top and sprinkle with salt. Combine the egg and sour cream; spread over the onions. Bake at 345 degrees until well risen and browned (about 15 to 20 minutes). Cut into squares and serve while still warm.
