Ground Beef Pie

Whenever we had a beef roast while I was growing up and we had leftovers, we could always count on a meat pie the next evening. Mom would make a pie crust and not only grind up the roast but also any potatoes, carrots, onions, etc. that we had with it to fill the crust. Here’s a recipe something like Mom’s but with two major differences. It uses ground beef and has no crust. This pie will be light and fluffy

2 Tbsp chopped onions
2 Tbsp shortening
2 c mashed potatoes
1 Tbsp minced parsley
1 lb ground beef
3/4 c beef bouillon or gravy
salt and pepper
2 eggs, separated

Saute the onion in the shortening until tender and golden brown. Mix these sauted onions with the mashed potatoes, ground beef and bouillon or gravy. If you use gravy, thin it with a little milk. Add the salt and pepper or any other seasonings or flavoring sauce you prefer. Add the beaten egg yolks and parsley. Mix well and fold in stiffly beaten egg whites. Spoon the mixture into a greased baking dish. Bake at 350 degrees for 1 hour.
