About once a week for breakfast, I’ll have a slice of dried beef and a piece of cheese on toast. I don’t know how healthy it is, but I enjoy dried beef so I really don’t care. Here is a recipe for dried beef sandwiches from my Grandma’s recipe book that makes an excellent luncheon fare.
2 c ground dried beef
1/2 c chopped celery
1 three-ounce package cream cheese
Combine the dried beef and cheese and add the celery. Moisten with enough mayonnaise to spreading consistency. If so desired, you may add 2 hard-boiled eggs that have been chopped. If you are using home-made dried beef that is too salty, freshen it up before grinding. To freshen, pour boiling water over the meat and let it stand for 2 minutes before draining. If the meat is still damp, dry on absorbent cloth or paper.
