Squash Doughnuts

Looking for recipes to use squash in, I ran across this one in my Grandmother’s recipe book. It looks to me like they may be healthy as there is squash in them.

1 c milk
1 c cooked squash
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
3 c flour
1-1/4 c sugar
2 Tbsp shortening
2 eggs, well beaten
1 tsp vanilla flavoring
3 tsp baking powder

Cream the sugar and sshortening. Add the eggs, squash and flavoring. Sift flour, measure, and sift with the salt, baking powder and spices. Add alternately with milk to first mixture. Chill dough. Turn onto lightly floured board. Roll in sheet 1/4 inch thick. Cut with floured cutter. Fry in deep fat at 365 degrees until brown. Drain on paper toweling.
