Having put up loads of tomatoes and having fresh ones on hand, I’m always looking for unique ways to use them. Here’s my latest discovery.
1/4 c minced onions
1 c canned tomatoes or tomato juice
1/4 c minced bacon
6 eggs, slightly beaten
salt and pepper
Fry bacon until crisp, add the onion and fry until brown. Add the tomatoes or juice. Season with salt and pepper to taste. Add the eggs and cook slowly, stirring constantly, until whites are firm. Serve on toast.
