No Knead Bread Rolls

Do you like eating home-made bread but hate the hassle of all the kneading? If so, this recipe is for you.

2 pkgs yeast
1/2 c shortening
1/2 c sugar
2 eggs
1/2 c lukewarm water
1 Tbsp salt
2 c boiling water
6 to 7 c flour

Crumble yeast in warm water. Place shortening, salt and sugar in large bowl. Add boiling water, stir until salt and sugar dissolve. Cool to lukewarm and add dissolved yeast. Stir in unbeaten eggs. Gradually add half the flour and beat until smooth. Continue to add flour until dough no longer clings. It is not necessary to add the full amount of flour. Grease large bowl and put dough in it and cover it. Chill 2 to 24 hours. Punch and shape. Put in greased pans. Brush with oil and let rise. Bake 8 to 12 minutes at 420 degrees. Works well for cinnamon rolls too.

This Could Have Happened

If you’ve watched Primal Survivor on TV you know that survival instructor Hazen Audel depends on skills learned from native inhabitants as he treks into native country on a mission. Here is one segment you probably won’t see any time soon.

After paddling across crock infested waters for two days, Hazen suddenly finds himself surrounded by a bloodthirsty group of natives. Upon surveying the situation, he says quietly to himself, “Oh, God, I’m screwed!”

The sky darkens, and a voice booms out, “No, you are not screwed. Pick up that rock at your feet and bash in the head of the chief standing in front of you.”

So Hazel picks up the rock and bashes the life out of the chief. Standing above the lifeless body , breathing heavily, he looks at a hundred angry natives.

The voice booms out again, “Okay. Now you are screwed.”

Reuse Cooking Oil

Deep frying fish once in vegetable oil and then discarding the oil is not necessary. When on a fishing trip, using the oil only once means you must tote extra weight into camp which is neither desirable nor necessary.

Simply take along  an empty container, the same size as your oil container, to strain the used oil into. After frying up and enjoying your day’s catch, let the oil cool. When thoroughly cool, strain the oil through a coffee filter or a milk filter into the empty container. You can purchase the later from Filter-Clean in boxes of 100. If you have real deep pockets, you can purchase cooking oil filters from a place such as Gander Mountain. After the next night’s fish feast, use a clean filter to filter the oil back into the original container. You can do this several times before using new oil.

Oatmeal Yeast Rolls

In addition in helping control weight, oats also helps to lower cholesterol, blood pressure and heart disease. Their soluble fiber helps to control blood sugar, important in diabetes control. Here is a recipe using oatmeal to make yeast rolls to gain these benefits.

1 c cooked oatmeal, cooled
1 pkg dry yeast
1/4 c lukewarm water
3/4 c milk, scalded
1/2 c sugar
2 tsp salt
1/3 c butter/ margarine
1 egg
4-1/2 to 5 c flour

Soften yeast in warm water. Pour scalded milk over sugar, salt and butter. Cool to lukewarm. Stir in egg and 1 cup flour. Add yeast and oatmeal. Stir in enough flour to make a soft dough. Turn onto lightly floured board, knead until smooth and satiny, about 10 minutes. Shape dough into crescents, spirals, cloverleafs, or Parker house rolls. Brush with melted shortening. Cover and let rise in warm place until nearly double, for about 45 minutes. Bake at 375 degrees for 15 to 18 minutes.

I’ve Got to Watch Less TV

I’ve got to watch less TV. It’s not the programs I fear, it’s the commercials. You’ve seen many times in my posts that certain things I’ve seen reminds me of a story. It happened again the night before last; a bra commercial this time.

A rather flat-chested woman went shopping for a new bra. She tried five or six shops in search of a size 28A bra, but to no avail. She was just about to give up when she stumbled onto a small lingerie shop that was run by an elderly deaf lady.

“Have you got any bras in size 28A?” she asked the elderly owner of the shop.

“What did you say?” asked the elderly lady.

“Have you got anything in size 28A?” repeated the woman louder.

“Sorry, I didn’t catch that, dear,” replied the clerk. “What is it you want?”

In frustration, the woman lifted up her T-shirt to reveal her breasts. “Have you got anything for these?” she asked.

The old lady looked at the woman’s breasts and said, “Have you tried Clearasil?”

What Grain for Your Culinary Creation? – #5

This is #5 in a series that started 8 Jan 2018 listing useful facts on several varieties of grain used in recipes.

  • Millet –  is easily digestible, high in antioxidant activity, and can help in the control of blood sugar and cholesterol. This whole grain is high in magnesium and iron. Based on 1/4 cup of dry grain, millet contains 189 calories, 2 g total fat, 2.5 g saturated fat, 0 mg cholesterol, 2.5 mg sodium, 36.5 g carbs, 4.25 g dietary fiber and 5.5 g protein. Millet may be used as an added ingredient, but not the primary ingredient in making flour, yeast breads and pies & pastry. It may also be used in pilafs and side dishes and as a fast cooking cereal.
  • Oats – Due to nutrient benefits which help to lower cholesterol, blood pressure and heart disease, in addition to help control weight is what makes oats one of the best whole grains. Oats are higher in protein and healthy fats, while being lower in carbohydrates than most whole grains. They contain 20 polyphenols called avenanthramides, which provide antioxidant, anti-inflammatory and anti-itch activities. Their soluble fiber helps to control blood sugar, and they have beta-glucans which can aid the body’s endurance through chemotherapy and other nuclear therapies, as they are thought to be radioprotective. Introduction to children early in life can help produce asthma. Based on 1/4 cup of dry grain, oats contains 152 calories, 2.75 g total fats, .5 g saturated fat, 0 mg cholesterol, .75 mg sodium, 25.75 g carbs, 4.25 g dietary fiber and 6.5 g protein. Oats come in many forms, including but not limited to, quick cooking oats, rolled oats, oat bran, oatmeal, steel-cut oats, baby flake oats and oat groats. As an example, quick rolled oats may be used as an added ingredient, but not the primary ingredient in making yeast breads. It may also be used as a quick cooking cereal.

Baking Powder Biscuits

If you want to serve ‘from scratch’ biscuits with your wild game, here’s a baking powder biscuit recipe for both a large batch (24 biscuits) and a half recipe (12 biscuits).

Large recipe

4 c (1 qt) sifted flour
5 tsp baking powder
1/2 tsp salt
1/2 c shortening
1-1/3 c (or there abouts) milk

Half recipe

2 c sifted flour
2-1/2 tsp baking powder
1/4 tsp salt
4 Tbsp shortening
2/3 c (or there abouts) milk

Sift flour once; measure; add baking powder and salt and sift together into a bowl. Cut in shortening until mixture looks like coarse meal, using 2 knives or a wire pastry blender. Add milk, mixing until a soft dough is formed. Turn onto a lightly floured board and knead half a minute to shape. (Takes about 15 turns). Roll or pat 1/2 inch thick. Cut with floured 2″ cutter Let stand undisturbed for another half (1/2) minute, if you want especially even, well-shaped biscuits! Place on ungreased baking sheet. Bake in hot oven, 450° F. for 12 to 15 minutes.

For Quick-Biscuits, increase milk to 2 cups for large recipe or 1 cup for the half recipe. Mix dough and drop from a teaspoon onto baking sheet or ungreased muffin pans. Bake.
